  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Mix dry ingredients in a bowl; cream butter and sugar, then add molasses, egg, and vanilla.
  3. Combine wet and dry ingredients to form dough, then roll out and cut shapes.
  4. Place cookies on baking sheet and bake for 8-10 minutes until edges are firm.
  5. Cool cookies and decorate with icing if desired.

For best results, chill the dough before rolling out.
