Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1/4 cup molasses
  • 1 large egg
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and brown sugar until fluffy.
  3. Add molasses, egg, and vanilla; mix well.
  4. Whisk together flour, spices, baking soda, salt, and herbs.
  5. Gradually mix dry ingredients into wet to form dough, then shape into balls and place on sheet.
  6. Bake 10-12 minutes until edges are golden. Cool before serving.

Chill the dough for easier handling if needed.
