Dried ingredients
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar, for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Mix dry ingredients in a bowl.
  2. Cream butter and brown sugar, then add molasses, egg, vanilla.
  3. Gradually mix in dry ingredients. Chill dough 30 minutes.
  4. Shape dough into balls, coat with powdered sugar, place on baking sheet.
  5. Bake 10-12 minutes, cool before serving.

Notes

Chilling the dough makes it easier to handle and shapes better.
