Ingredients
  

Dough
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for filling)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Mix dry ingredients in a bowl. Cream butter, sugar, and molasses until fluffy.
  3. Add egg and vanilla; combine. Gradually mix in dry ingredients to form dough.
  4. Shape dough into 1-inch balls, place on sheet, flatten slightly. Bake 8-10 mins.
  5. Cool cookies. Mix powdered sugar, milk, vanilla for filling. Spread on cookies and sandwich.

Notes

Chill the dough for easier handling if needed.
