Gluten-Free Chocolate Chip Banana Bread

Ingredients
  

dry ingredients
  • 2 cups gluten-free all-purpose flour King Arthur or Bob’s Red Mill 1:1 blend
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon optional
wet ingredients
  • 3 ripe bananas ripe bananas spotty ones, riper is better
  • 2 large eggs room temp
  • ½ cup melted butter or coconut oil for dairy-free
  • ¾ cup brown sugar packed
  • 1 tsp vanilla extract the real stuff
  • ½ cup plain greek yogurt or sour cream makes it soft
chocolate chips
  • 1 cup chocolate chips semi-sweet or dark, dairy-free if needed
  • extra chips for sprinkling on top

Method
 

  1. Preheat oven to 350°F (175°C) and line the loaf pan with parchment paper.
  2. In a large bowl, mash bananas and whisk in eggs, melted butter, vanilla, and yogurt.
  3. In another bowl, combine gluten-free flour, baking soda, salt, and cinnamon. Gradually add dry ingredients to wet mixture, mixing until just combined.
  4. Fold in chocolate chips and pour batter into prepared loaf pan. Sprinkle extra chocolate chips on top.
  5. Bake for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
