Method
- Preheat oven to 350°F (175°C) and line the loaf pan with parchment paper.
- In a large bowl, mash bananas and whisk in eggs, melted butter, vanilla, and yogurt.
- In another bowl, combine gluten-free flour, baking soda, salt, and cinnamon. Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fold in chocolate chips and pour batter into prepared loaf pan. Sprinkle extra chocolate chips on top.
- Bake for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.
Notes
Use ripe bananas for best flavor and sweetness.
