Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
wet ingredients
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 cup gluten-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix dry ingredients in a bowl.
  3. Whisk melted coconut oil, sugars, egg, and vanilla until smooth.
  4. Combine dry and wet ingredients, then fold in chocolate chips.
  5. Scoop dough onto baking sheet and bake for 10-12 minutes.
  6. Cool cookies before serving.

Notes

For softer cookies, bake for 10 minutes; for crunchier, bake closer to 12 minutes.
