Ingredients
  

Dry ingredients
  • 1 cup almond flour
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup gluten-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix dry ingredients in a bowl; cream butter and sugars, then add egg and vanilla.
  3. Combine dry and wet mixtures; fold in chocolate chips.
  4. Scoop dough onto baking sheet, spacing 2 inches apart.
  5. Bake for 10-12 minutes; cool on sheet 5 minutes, then transfer to wire rack.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
