Ingredients
  

Dry ingredients
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup coconut sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
Wet ingredients
  • 1/4 cup cup molasses
  • 1/4 cup cup coconut oil, melted
  • 1 egg egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients in a bowl; whisk wet ingredients in another.
  3. Combine wet and dry to form dough, then shape into balls.
  4. Flatten balls and bake for 10-12 minutes until edges are set.
  5. Cool cookies on a wire rack before serving.

Notes

Chill the dough if it becomes too soft for easier shaping.
