Ingredients
  

Gluten-Free Flour Mix
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fruit jam raspberry or strawberry

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter and sugar until fluffy, then mix in egg yolk and vanilla.
  3. Combine dry ingredients and gradually mix into wet until dough forms.
  4. Form dough into small balls, make an indentation, and fill with jam.
  5. Bake for 12-15 minutes until edges are golden. Cool before serving.
