Method
- Pat scallops dry and season with salt and pepper.
- Heat a hot pan with olive oil, sear scallops 1-2 minutes until golden, then flip for 1 minute.
- Add butter, tilt pan, and baste scallops for 30 seconds.
- Squeeze lemon juice over scallops and sprinkle with parsley before serving.
