Ingredients
  

Seafood
  • 8 large fresh scallops
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt & freshly ground black pepper Salt & freshly ground black pepper
  • 1 lemon lemon, halved
  • 2 tbsp chopped fresh parsley

Method
 

  1. Pat scallops dry and season with salt and pepper.
  2. Heat a hot pan with olive oil, sear scallops 1-2 minutes until golden, then flip for 1 minute.
  3. Add butter, tilt pan, and baste scallops for 30 seconds.
  4. Squeeze lemon juice over scallops and sprinkle with parsley before serving.

Notes

Ensure scallops are dry for a better sear.
