  • 4 pieces boneless (skinless chicken breasts (or thighs))
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 California avocados California avocados (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded mozzarella or Monterey Jack cheese
Garnish & Extras
  • chopped cilantro, balsamic glaze, diced red onion

Method
 

  1. Marinate chicken with olive oil, lime juice, garlic, paprika, cumin, salt, and pepper for 10 minutes.
  2. Preheat grill to medium-high heat and cook chicken for 6-8 minutes per side until fully cooked.
  3. While chicken grills, prepare avocado slices and halved cherry tomatoes.
  4. Once cooked, top chicken with sliced avocados, cherry tomatoes, and shredded cheese. Grill for 2-3 minutes until cheese melts.
  5. Garnish with chopped cilantro, drizzle with balsamic glaze, and add diced red onion before serving.

Notes

For extra flavor, marinate the chicken longer or add your favorite herbs.
