  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 0.5 cup buttermilk
  • 1 packet dry ranch dressing mix (1 oz)
  • 0.25 cup grated Parmesan cheese
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • Wooden skewers soaked in water for 30 minutes

Method
 

  1. Whisk buttermilk, ranch dressing mix, Parmesan cheese, garlic, olive oil, salt, and pepper in a bowl.
  2. Add chicken to marinade, coat well, and refrigerate for 30 minutes to 4 hours.
  3. Preheat grill to medium heat (350-400°F).
  4. Thread chicken onto soaked wooden skewers.
  5. Grill skewers for 6-8 minutes per side, until chicken is cooked through (165°F).
  6. Remove from grill and let rest before serving.

Notes

Soaking the wooden skewers prevents them from burning on the grill.
