  • 1 cup rolled oats
  • 1 ripe banana, mashed banana
  • 1/4 cup almond butter (or any nut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix oats, mashed banana, almond butter, honey, vanilla, baking soda, and salt until combined.
  3. Fold in chocolate chips evenly.
  4. Drop spoonfuls onto baking sheet, spacing 2 inches apart.
  5. Bake for 10-12 minutes until edges are golden.
  6. Cool briefly before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg.
