Ingredients
  

Pasta
  • 8 oz elbow macaroni about 2 cups
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
Seasonings
  • to taste Salt and pepper
  • 1 cup shredded carrots about 2 medium carrots
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 1/2 cup finely chopped green onions
  • 1/4 cup diced sweet pickles or relish optional
Garnish
  • for garnish Hard-boiled eggs optional

Method
 

  1. Cook the macaroni until al dente, then rinse with cold water.
  2. Mix mayonnaise, sour cream, vinegar, mustard, sugar, and garlic powder to make the dressing.
  3. Combine cooled pasta with vegetables and dressing; stir gently.
  4. Chill for 30 minutes, then serve garnished with eggs and green onions if desired.
