Ingredients
  

Cooking spray or olive oil
  • 1/2 teaspoon olive oil
  • 1/2 white onion diced white onion
  • 5 oz fresh spinach
  • 6 large eggs
  • 4 egg whites egg whites
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese
  • 1 cup sliced cherry tomatoes
  • 6 English muffins sourdough or whole wheat English muffins
  • 6 slices cheddar cheese

Method
 

  1. Sauté diced onion and spinach in olive oil until softened.
  2. Whisk eggs, egg whites, milk, salt, and pepper; pour into pan and cook until set.
  3. Assemble sandwiches with cooked eggs, cheese slices, and cherry tomatoes on toasted muffins.

Notes

Prepare the egg mixture and assemble sandwiches the night before for quick mornings.
