Method
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Mix oats, carrots, banana, honey, almond flour, baking powder, cinnamon, nutmeg, and salt until combined.
- Fold in raisins or walnuts if desired.
- Scoop dough onto baking sheet, flatten slightly, and bake for 12-15 minutes.
- Cool briefly before transferring to a wire rack to cool completely.
Notes
For best results, use fresh grated carrots and ripe bananas.
