Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup mashed banana
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup raisins or chopped walnuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix oats, carrots, banana, honey, almond flour, baking powder, cinnamon, nutmeg, and salt until combined.
  3. Fold in raisins or walnuts if desired.
  4. Scoop dough onto baking sheet, flatten slightly, and bake for 12-15 minutes.
  5. Cool briefly before transferring to a wire rack to cool completely.

Notes

For best results, use fresh grated carrots and ripe bananas.
