Method
- Spray slow cooker with non-stick spray.
- Pat chicken dry and place in slow cooker.
- Sprinkle chicken with salt, pepper, oregano, Italian seasoning, and garlic powder.
- Whisk chicken broth, garlic, sun-dried tomatoes, and coconut milk (if using) in a bowl.
- Pour sauce over chicken.
- Cover slow cooker.
- Cook on LOW for 4-6 hours or on HIGH for 2-3 hours.
- Remove lid after cooking.
- Stir in half-and-half (if using). Add cornstarch slurry for thicker sauce.
- Add spinach and Parmesan cheese. Stir until spinach wilts.
- Serve chicken whole or shredded. Garnish with basil or parsley.

For a dairy-free option, substitute nutritional yeast for Parmesan cheese and ensure your broth is dairy-free.
