  • 2 lbs Boneless, Skinless Chicken Breasts
  • 1 cup Chicken Broth (low sodium)
  • 1/2 cup Sun-Dried Tomatoes (oil-packed)
  • 4 cloves Fresh Garlic, minced
Seasoning
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Dried Oregano
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
Sauce
  • 1 (13.5 oz) can Full-Fat Canned Coconut Milk
  • 1 cup Half-and-Half or Evaporated Milk
  • 4–6 cups Fresh Baby Spinach
  • 1/2 cup Freshly Grated Parmesan Cheese
Thickener (If needed)
  • 1 tbsp cornstarch whisked with 2 tbsp cold water (Slurry)
Garnish (Optional)
  • 2 tbsp Fresh Basil or Parsley, chopped

Method
 

  1. Spray slow cooker with non-stick spray.
  2. Pat chicken dry and place in slow cooker.
  3. Sprinkle chicken with salt, pepper, oregano, Italian seasoning, and garlic powder.
  4. Whisk chicken broth, garlic, sun-dried tomatoes, and coconut milk (if using) in a bowl.
  5. Pour sauce over chicken.
  6. Cover slow cooker.
  7. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours.
  8. Remove lid after cooking.
  9. Stir in half-and-half (if using). Add cornstarch slurry for thicker sauce.
  10. Add spinach and Parmesan cheese. Stir until spinach wilts.
  11. Serve chicken whole or shredded. Garnish with basil or parsley.

Notes

For a dairy-free option, substitute nutritional yeast for Parmesan cheese and ensure your broth is dairy-free.
