  • 2 pounds beef stew meat
Vegetables
  • 1 large onion
  • 3 cloves garlic
  • 2 medium carrots
  • 2 medium potatoes
Broth and Seasonings
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme

Method
 

  1. Heat oil in a large Dutch oven over medium-high heat.
  2. Add beef and cook until browned, about 5 minutes. Add onion and garlic; cook until translucent.
  3. Add carrots and potatoes; cook for 5 minutes. Stir in broth, tomato paste, and thyme.
  4. Bring to a boil, then reduce heat to low and simmer, covered, for 2.5 hours. Season with salt and pepper.
