Ingredients
  

Canned Goods
  • 2 cans low-sodium chickpeas rinsed
  • 1 tablespoon olive oil
  • 12 ounces 93%-lean ground turkey optional
  • 1/2 teaspoon dried oregano
  • 3 cups fresh spinach
  • 2 tablespoons tomato paste
  • to taste Salt and pepper

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. If using turkey, cook until browned.
  3. Add oregano, chickpeas, and tomato paste; mash some chickpeas to thicken.
  4. Stir in spinach and cook until wilted.
  5. Season with salt and pepper; serve warm.

Notes

You can omit the turkey for a vegetarian version.
