Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1/4 cup molasses
  • 1 egg egg
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Decorations
  • icing and sprinkles for decoration optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and brown sugar until fluffy, then mix in molasses, egg, and vanilla.
  3. Whisk together dry ingredients, then gradually add to wet ingredients to form dough.
  4. Scoop dough onto baking sheet, spacing 2 inches apart, and bake 8-10 minutes.
  5. Let cookies cool before decorating with icing and sprinkles if desired.

Notes

For best results, do not overbake; edges should be firm but centers soft.
