Ingredients

  • 2 pieces boneless, skinless chicken breasts
Vegetables
  • 1 lb fresh green beans
  • 1 cup sliced mushrooms
Liquids and seasonings
  • 1 cup chicken broth
  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Cut chicken into bite-sized pieces and trim green beans.
  2. Cook chicken in a skillet until browned. Add mushrooms and green beans; sauté until slightly tender.
  3. Mix broth, cream, garlic, onion, paprika, salt, and pepper; pour over chicken and vegetables.
  4. Transfer to a baking dish and bake for 25-30 minutes until bubbly and cooked through.

Notes

You can top with crispy onions for extra crunch.
