Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix dry ingredients in a bowl. In another bowl, mash bananas and whisk in eggs, oil, and sugar.
- Combine wet and dry ingredients until just mixed. Pour half into the pan.
- Mix cinnamon and brown sugar to make the swirl. Spread half over batter, then add remaining batter and swirl in cinnamon mixture.
- Bake for 60 minutes or until a toothpick inserted comes out clean. Cool before slicing.
Notes
For extra flavor, add chopped nuts or chocolate chips to the batter.
