Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet ingredients
  • 3 ripe bananas mashed bananas about 1.5 cups mashed
  • 0.75 cup vegetable oil
  • 2 large eggs eggs
Cinnamon swirl
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. In another bowl, mash bananas and whisk in eggs, oil, and sugar.
  3. Combine wet and dry ingredients until just mixed. Pour half into the pan.
  4. Mix cinnamon and brown sugar to make the swirl. Spread half over batter, then add remaining batter and swirl in cinnamon mixture.
  5. Bake for 60 minutes or until a toothpick inserted comes out clean. Cool before slicing.

Notes

For extra flavor, add chopped nuts or chocolate chips to the batter.
