Method
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, oil, eggs, and vanilla.
- Pour wet ingredients into dry ingredients and stir until just combined.
- In a small bowl, beat cream cheese and powdered sugar until smooth. Drop spoonfuls onto muffin batter and swirl with a toothpick.
- Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool before serving.
Notes
Use ripe bananas for best flavor and mash thoroughly for a smooth batter.
