Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 3 ripe bananas mashed bananas
  • 1/3 cup vegetable oil
  • 2 large eggs eggs
  • 1 teaspoon vanilla extract
Cream Cheese Swirl
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, oil, eggs, and vanilla.
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. In a small bowl, beat cream cheese and powdered sugar until smooth. Drop spoonfuls onto muffin batter and swirl with a toothpick.
  5. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool before serving.

Notes

Use ripe bananas for best flavor and mash thoroughly for a smooth batter.
