Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
Wet ingredients
  • 2 ripe bananas mashed bananas about 1 cup mashed
  • 1/3 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs eggs

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, and cinnamon.
  3. In another bowl, mash bananas and mix in sugar, oil, and eggs.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter evenly into muffin cups and bake for 20 minutes.

Notes

For extra flavor, sprinkle a little cinnamon sugar on top before baking.
