Method
 

  1. Combine heavy cream, almond milk, erythritol, and vanilla extract. Whisk until smooth.
  2. Churn the mixture in an ice cream maker until soft-serve consistency.
  3. Fold in crushed cookies and chocolate chips, if using.
  4. Transfer to a container and freeze for at least 4 hours.
