Ingredients
  

Dough
  • 2 cups almond flour
  • 1/2 cup erythritol or preferred keto sweetener
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and erythritol until smooth.
  3. Add egg and vanilla, mix well.
  4. Mix in dry ingredients until dough forms.
  5. Roll out between parchment to 1/4 inch thick, cut shapes, and place on sheet.
  6. Bake for 10-12 minutes, cool before serving.
