Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Cream butter and erythritol until smooth.
- Add egg and vanilla, mix well.
- Mix in dry ingredients until dough forms.
- Roll out between parchment to 1/4 inch thick, cut shapes, and place on sheet.
- Bake for 10-12 minutes, cool before serving.
Notes
Use a cookie cutter for fun shapes and store in an airtight container.
