Ingredients
  

Crust
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1 large egg
  • 1/3 cup powdered sweetener
  • 1/3 cup unsalted butter softened
  • 1/2 tsp baking powder
  • 2 tsp vanilla extract
Frosting
  • 1/2 cup full-fat cream cheese softened
  • 3 tbsp unsalted butter softened
  • 1/2 cup heavy whipping cream room temperature
  • 1/4 cup powdered sweetener
  • 1 tsp vanilla extract
Toppings
  • 1 cup strawberries sliced
  • 2/3 cup blueberries
  • 1/4 cup raspberries

Method
 

  1. Preheat oven to 350F / 180C and line a baking sheet with parchment paper. Set aside.
  2. Combine dry ingredients: almond flour, coconut flour, powdered Erythritol, and baking powder.
  3. Incorporate softened butter, egg, and vanilla extract. Mix until a slightly thick but sticky batter forms.
  4. Transfer the dough to the baking sheet and flatten it into a large (10 inch) circle.
  5. Bake in the preheated oven for 12-15 minutes until golden.
  6. Prepare the icing. Add all icing ingredients to a bowl and beat until smooth and creamy.
  7. Remove the crust from the oven and let it completely cool.
  8. Evenly spread the cream cheese filling on top of the cooled crust.
  9. Decorate with strawberry slices, blueberries, and raspberries.
  10. Place in the fridge and let it cool for at least 20 minutes before serving.
  11. Cut into 12 slices and enjoy!

Notes

For a sweeter crust, add an extra tablespoon of powdered sweetener.
