Chicken
  • 4 boneless, skinless chicken breasts
Marinade
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
Garnish
  • Fresh cilantro, for garnish

Method
 

  1. Whisk together lime juice, orange juice, pineapple juice, olive oil, honey, minced garlic, grated ginger, salt, black pepper, and red pepper flakes (if using).
  2. Marinate chicken in the mixture for at least 1 hour, or overnight.
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade and discard remaining marinade.
  5. Grill chicken for 6-7 minutes per side, until internal temperature reaches 165°F (75°C).
  6. Let chicken rest for 5 minutes.
  7. Garnish with fresh cilantro.

Notes

For best results, marinate the chicken overnight to allow the flavors to fully penetrate.
