Method
- Preheat oven to 400°F (200°C). Prepare baking tray with parchment paper or oil.
- Clean and slice the potatoes, peppers, onion, and zucchini.
- Arrange vegetables and kielbasa on the sheet pan. Drizzle with olive oil and sprinkle with seasonings. Toss to coat.
- Distribute in an even layer. Roast for 25-30 minutes, stirring halfway, until vegetables are tender.
- Remove from oven, garnish with parsley (if using), and serve warm.
Notes
For extra flavor, add a squeeze of lemon juice after roasting.
