  • 1 medium red onion cut into thick wedges
  • 1 pound baby red potatoes halved or quartered for larger sizes
  • 2 bell peppers any variety, sliced into long strips
  • 2 medium zucchinis cut into semi-circular slices
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1.5 teaspoons granulated garlic powder
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon dried oregano leaves
  • 0.5 teaspoon fine sea salt or to preference
  • 14 ounces kielbasa beef sausage cut into ½-inch thick rounds
  • Fresh flat-leaf parsley finely chopped (optional, for garnish)

Method
 

  1. Preheat oven to 400°F (200°C). Prepare baking tray with parchment paper or oil.
  2. Clean and slice the potatoes, peppers, onion, and zucchini.
  3. Arrange vegetables and kielbasa on the sheet pan. Drizzle with olive oil and sprinkle with seasonings. Toss to coat.
  4. Distribute in an even layer. Roast for 25-30 minutes, stirring halfway, until vegetables are tender.
  5. Remove from oven, garnish with parsley (if using), and serve warm.

Notes

For extra flavor, add a squeeze of lemon juice after roasting.
