Lemon Parmesan Kale Salad

Ingredients
  

Kale
  • 4 cups curly kale washed, dried, leaves removed from stem
  • 2 TBSP fresh lemon juice
  • 2 TBSP extra virgin olive oil
  • 1/4 tsp fresh minced garlic
  • 1/4 tsp salt
  • 1/8 tsp black pepper or to taste
  • 1/2 cup croutons homemade or store-bought
  • 1/4 cup freshly grated Parmesan cheese

Method
 

  1. Wash, dry, and remove kale leaves from stems, then chop finely.
  2. Whisk lemon juice, olive oil, garlic, salt, and pepper to make dressing. Drizzle over kale.
  3. Massage dressing into kale until tender and darkened.
  4. Toss with croutons and top with Parmesan cheese. Serve immediately.

Notes

For extra cheesy flavor, finely grate Parmesan and chop into small bits for sprinkling.
