Lemony Parmesan Kale Salad

Ingredients

  • 2 bunches Curly Kale
  • 1 cup Croutons
  • 1/2 cup Freshly Grated Parmesan Cheese
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 3 cloves Garlic minced
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper

Method
 

  1. Remove stems from kale, wash leaves, and massage with salt until softened.
  2. Chop or crush croutons and add to the kale.
  3. Mix olive oil, lemon juice, garlic, and black pepper to make the dressing.
  4. Pour dressing over salad, add Parmesan, and toss to combine.
  5. Serve immediately or refrigerate for up to 2 days.

Notes

Massage the kale well for best texture and flavor.
