Ingredients
  

Vegetables
  • 1 large broccoli head trimmed into small pieces
  • 2 tablespoons extra virgin olive oil
  • 3 cloves minced garlic
  • 0.25 teaspoon crushed red pepper
  • to taste Salt and black pepper
  • 12 ounces penne pasta
  • 1 cup freshly grated parmesan cheese

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute.
  3. Add broccoli pieces to the skillet and cook for 5-7 minutes until tender.
  4. Combine cooked pasta with the broccoli mixture. Toss well to combine.
  5. Stir in grated parmesan cheese and season with salt and black pepper to taste. Serve warm.

Notes

You can add a squeeze of lemon for extra freshness or substitute with other cheeses.
