Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Filling
  • 1/2 cup raspberry jam
  • powdered sugar for dusting powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Cream butter and sugar until fluffy. Mix in egg yolk, vanilla, and cinnamon.
  3. Whisk together flours and salt; gradually add to wet mixture to form dough.
  4. Roll out dough, cut cookies, and make center cutouts. Bake 10-12 mins until golden.
  5. Cool cookies, spread jam on whole cookies, top with cutouts, and dust with powdered sugar.

Notes

Chill dough before rolling for easier handling.
