Ingredients
  

Dry ingredients
  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ½ cup erythritol
  • 1 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon baking soda
Wet ingredients
  • 1 egg egg
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons molasses (optional) to enhance flavor

Method
 

  1. Preheat oven to 175°C and line a baking tray with parchment paper.
  2. Mix dry ingredients in a bowl, then whisk wet ingredients separately.
  3. Combine wet and dry mixtures until dough forms.
  4. Shape dough into small balls and place on tray.
  5. Bake for 8-10 minutes until edges are golden.

Notes

Using molasses adds flavor but is optional for low sugar.
