Method
- Boil macaroni until al dente. Drain and set aside.
- Melt 2 tablespoons butter, whisk in flour, cook for 1 minute.
- Gradually pour in milk, whisking until smooth. Cook 2-3 minutes until thickened.
- Reduce heat, stir in cheeses, mustard powder, garlic powder, salt, and pepper until melted and smooth.
- Add macaroni to cheese sauce, stir to coat. Remove from heat.
- Lay out four tortillas, spread 1/2 cup mac and cheese over each, leaving a border.
- Place a second tortilla on top of the mac and cheese filling.
- Heat skillet, melt butter. Cook quesadillas 2-3 minutes per side until golden brown.
- Add butter as needed. Cook until golden brown.
- Rest 1-2 minutes before cutting into wedges. Serve hot.
Notes
For a spicier kick, add a pinch of cayenne pepper to the cheese sauce!
