Mac and Cheese Quesadillas

These Mac and Cheese Quesadillas are a fun and easy twist on two comfort food classics! Cheesy macaroni is sandwiched between tortillas and grilled to golden perfection.

  • 1 cup elbow macaroni, uncooked
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 medium flour tortillas
  • 2 tablespoons unsalted butter, for cooking

Method
 

  1. Boil macaroni until al dente. Drain and set aside.
  2. Melt 2 tablespoons butter, whisk in flour, cook for 1 minute.
  3. Gradually pour in milk, whisking until smooth. Cook 2-3 minutes until thickened.
  4. Reduce heat, stir in cheeses, mustard powder, garlic powder, salt, and pepper until melted and smooth.
  5. Add macaroni to cheese sauce, stir to coat. Remove from heat.
  6. Lay out four tortillas, spread 1/2 cup mac and cheese over each, leaving a border.
  7. Place a second tortilla on top of the mac and cheese filling.
  8. Heat skillet, melt butter. Cook quesadillas 2-3 minutes per side until golden brown.
  9. Add butter as needed. Cook until golden brown.
  10. Rest 1-2 minutes before cutting into wedges. Serve hot.

Notes

For a spicier kick, add a pinch of cayenne pepper to the cheese sauce!
