Ingredients
  

Meat Loaf
  • 2 lbs ground beef
  • 1 cup rolled oats
  • 1 cup milk
  • 1 large egg, beaten
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
Herb Filling
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 tbsp olive oil
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • Salt and pepper
Glaze (optional)
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine ground beef, oats, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper in a bowl. Mix well.
  3. Prepare the herb filling by mixing parsley, basil, olive oil, breadcrumbs, minced garlic, salt, and pepper.
  4. Flatten half of the meat mixture into a rectangle.
  5. Spread the herb filling evenly over the meat rectangle, leaving a border.
  6. Place the remaining meat mixture on top and seal the edges to create a loaf shape.
  7. Transfer the meatloaf to a baking pan.
  8. If using the glaze, mix ketchup, brown sugar, and apple cider vinegar and brush over the meatloaf.
  9. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For a richer flavor, consider adding a pinch of red pepper flakes to the herb filling.
