Method
- Preheat oven to 350°F (175°C).
- Combine ground beef, oats, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper in a bowl. Mix well.
- In a separate bowl, mix parsley, basil, olive oil, breadcrumbs, minced garlic, salt, and pepper for the herb filling.
- Flatten half of the meat mixture into a rectangle on parchment paper.
- Spread the herb filling evenly over the meat rectangle, leaving a border.
- Place the remaining meat mixture on top, seal the edges to create a loaf.
- Transfer the meatloaf to a baking pan.
- If using glaze, mix ketchup, brown sugar, and vinegar. Brush over meatloaf.
- Bake for 60-75 minutes, until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
For a richer flavor, consider adding a tablespoon of Dijon mustard to the meat mixture.
