Ingredients
  

Tortillas
  • 8 pieces corn tortillas (6-inch size)
Cooking oil
  • 1 tablespoon cooking oil
Canned corn
  • 8.5 ounces canned corn (drained)
Cooked chicken
  • 1.5 cups cooked chicken, shredded
Salsa
  • 8 ounces salsa (store-bought or homemade)
Taco seasoning mix
  • 2 tablespoons taco seasoning mix
Black beans
  • 15 ounces black beans (rinsed and drained)
Shredded cheese
  • 2 cups shredded colby jack cheese
Fresh cilantro leaves
  • to taste fresh cilantro leaves
Tomatoes
  • to taste tomatoes

Method
 

  1. Heat the tortillas and lightly brush with cooking oil.
  2. Mix shredded chicken with taco seasoning and salsa.
  3. Spread the chicken mixture onto the tortillas and top with black beans and cheese.
  4. Bake or broil until cheese is melted and tortillas are crispy.
  5. Garnish with cilantro and chopped tomatoes before serving.

Notes

For extra flavor, add sliced avocados or a squeeze of lime.
