Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
Wet ingredients
  • ½ cup unsalted butter, softened or substitute vegetable oil
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups mashed bananas about 4 small bananas

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas until 1 ⅓ cups; set aside.
  3. Mix dry ingredients; set aside.
  4. Cream butter and sugars; add eggs and vanilla.
  5. Stir in bananas, then dry ingredients; pour into pan.
  6. Bake 45-60 minutes; cool before slicing.

Notes

Use ripe bananas for best flavor and moisture.
