Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
Wet ingredients
  • 2 ripe bananas mashed bananas
  • 1/4 cup coffee brewed and cooled
  • 1/3 cup vegetable oil
  • 2 large eggs eggs
Optional topping
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, coffee, oil, and eggs.
  3. Pour wet ingredients into dry and stir until just combined. Optional: mix brown sugar and cinnamon for topping.
  4. Divide batter evenly into muffin cups. Sprinkle topping if using.
  5. Bake for 15 minutes or until a toothpick inserted comes out clean. Cool slightly before serving.

Notes

For extra moisture, add a splash of milk to the batter.
