  • 2 cups old-fashioned oats
  • 1 ½ cups milk (or almond milk for dairy-free)
  • 1 large apple, diced
  • 2 eggs eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Whisk eggs, milk, maple syrup, and vanilla in a large bowl.
  3. Mix in oats, baking powder, cinnamon, salt, then fold in apples and nuts.
  4. Pour into dish and bake for 30-35 minutes until golden and set.
  5. Let cool for 5 minutes before serving. Enjoy warm or reheat.

Notes

For added flavor, sprinkle with extra cinnamon or nuts before baking.
