Ingredients

  • 1 large green or red cabbage
  • 3 tablespoons olive oil (or melted butter for a richer flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease.
  2. Remove outer leaves, slice cabbage into ¾-inch thick steaks, keeping the core intact.
  3. Mix olive oil, garlic powder, paprika, onion powder, thyme, salt, and pepper. Brush onto both sides of each steak.
  4. Arrange steaks on the prepared baking sheet and roast for 25–30 minutes, flipping halfway.
