Ingredients
  

Chicken
  • 4 medium chicken breasts boneless and skinless
Salad
  • 8 cups mixed greens e.g., romaine, arugula, baby spinach
  • 4 hard-boiled eggs peeled and quartered
  • 1 large avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup cooked and crumbled turkey bacon
  • 1/4 cup dairy-free blue cheese crumbled (optional)
  • to taste Salt and pepper
  • Olive oil for grilling
Honey Dijon Dressing
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey or maple syrup for strict paleo
  • 2 tablespoons apple cider vinegar
  • to taste Salt and pepper

Method
 

  1. Preheat grill to medium-high, oil grate.
  2. Season chicken, grill 6-7 min/side. Rest, then slice.
  3. Toss greens, eggs, avocado, tomatoes, onion, bacon.
  4. Whisk dressing ingredients until smooth.
  5. Add chicken, drizzle dressing, toss. Top with cheese (optional).

Notes

Adjust dressing ingredients to your taste. For a vegetarian option, omit the chicken and bacon and add more vegetables or legumes.
