Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • to taste crushed peppermint candies for topping (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet.
  2. Mix dry ingredients; cream butter and sugars, then add egg and extracts.
  3. Combine wet and dry, fold in chocolate chips and marshmallows.
  4. Drop dough onto sheet, top with crushed candies if desired, and bake 10-12 minutes.
  5. Cool cookies on wire rack before serving.

Notes

For extra peppermint flavor, add more extract or crushed candies on top.
