Ingredients
  

Dry ingredients
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened cocoa powder
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar, for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients in a bowl; cream butter and sugar, then add molasses, egg, vanilla.
  3. Combine wet and dry ingredients, chill dough for 30 minutes.
  4. Portion dough, roll in powdered sugar, place on baking sheet.
  5. Bake 10-12 minutes, cool on wire rack.

Notes

Chill the dough for easier handling and better flavor.
