  • 1 lb smoked kielbasa sliced
  • 2 Tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion thinly sliced
  • 1 cup sliced mushrooms optional
  • 14 oz petite diced tomatoes with juice
  • 0.5 cup chicken or vegetable broth
  • 1.5 tsp Italian seasoning
  • Salt & pepper to taste

Method
 

  1. Heat oil in a large skillet over medium-high.
  2. Add sausage slices in a single layer—brown for about 3 minutes per side. Remove and set aside.
  3. In same skillet, add onion, peppers, mushrooms. Cook for 5-7 minutes until softened.
  4. Add tomatoes (with juice), broth, Italian seasoning; stir and scrape skillet bottom.
  5. Simmer 5 minutes until sauce thickens slightly.
  6. Return sausage to pan, stir, and heat through.
  7. Taste, season with salt, pepper, or crushed red pepper if you like heat.

Notes

Serve over rice, pasta, or enjoy as is for a low-carb meal.
