Method
- Heat oil in a large skillet over medium-high.
- Add sausage slices in a single layer—brown for about 3 minutes per side. Remove and set aside.
- In same skillet, add onion, peppers, mushrooms. Cook for 5-7 minutes until softened.
- Add tomatoes (with juice), broth, Italian seasoning; stir and scrape skillet bottom.
- Simmer 5 minutes until sauce thickens slightly.
- Return sausage to pan, stir, and heat through.
- Taste, season with salt, pepper, or crushed red pepper if you like heat.
Notes
Serve over rice, pasta, or enjoy as is for a low-carb meal.
