Ingredients

  • 2-3 pieces very ripe bananas, mashed
  • 1 teaspoon baking soda
  • 1/3 cup melted unsalted butter
  • 3/4 cup white sugar
  • pinch salt
  • 2 large eggs, beaten
  • 1 teaspoon vanilla essence
  • 1 1/2 cups gluten-free all-purpose flour including xanthan gum
  • 1/4 teaspoon xanthan gum (omit if your flour already includes it)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, melted butter, sugar, eggs, and vanilla in a bowl.
  3. In a separate bowl, combine gluten-free flour, baking soda, salt, and xanthan gum.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick comes out clean.

Notes

Use very ripe bananas for best flavor and sweetness.
