Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix mashed bananas, melted butter, sugar, eggs, and vanilla in a bowl.
- In a separate bowl, combine gluten-free flour, baking soda, salt, and xanthan gum.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick comes out clean.
Notes
Use very ripe bananas for best flavor and sweetness.
