  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 eggs eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Coffee Cake Topping
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 teaspoon cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix mashed bananas, sugar, oil, and eggs until well combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt; fold into banana mixture.
  4. Combine brown sugar, flour, butter, and cinnamon to make the topping; sprinkle over batter.
  5. Bake for 20 minutes or until a toothpick inserted comes out clean. Cool before serving.
