Ingredients
  

Grains
  • 1 cup uncooked quinoa or 2 cups cooked quinoa
  • 15 oz chickpeas drained and rinsed
Vegetables
  • 1 cup chopped red onion
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1 cup chopped baby spinach or chopped salad greens
  • 1 cup chopped flat leaf parsley
  • 1 large chopped carrot
  • 0.5 cup olive oil
  • 3 Tbsp lemon juice
  • 3 Tbsp white vinegar or apple cider vinegar
  • 1 Tbsp maple syrup or honey
  • 3 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp ground black pepper

Method
 

  1. Cook quinoa as per package instructions; let cool.
  2. Chop vegetables and herbs; prepare dressing by whisking oil, lemon juice, vinegar, maple syrup, garlic, salt, and pepper.
  3. Combine cooled quinoa, chickpeas, vegetables, and herbs in a large bowl. Toss with dressing.

Notes

This salad can be served immediately or chilled for later.
