Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup raspberry chia jam
  • 1 tablespoon chia seeds
  • 1 cup fresh raspberries
  • 1 tablespoon honey or maple syrup (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream softened butter and powdered sugar until fluffy. Mix in vanilla, then gradually add flours and salt to form dough.
  3. Chill dough for 30 minutes, then roll out to 1/4 inch thick. Cut out heart shapes and smaller hearts for centers.
  4. Bake for 10-12 minutes until edges are golden. Cool completely.
  5. Cook raspberries, chia seeds, and honey over medium heat for 5 minutes, mashing until thickened. Spread jam on whole cookies and top with cut-outs.

Notes

Chill the dough well for easier handling and ensure cookies are fully cooled before filling.
