Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Cream softened butter and powdered sugar until fluffy. Mix in vanilla, then gradually add flours and salt to form dough.
- Chill dough for 30 minutes, then roll out to 1/4 inch thick. Cut out heart shapes and smaller hearts for centers.
- Bake for 10-12 minutes until edges are golden. Cool completely.
- Cook raspberries, chia seeds, and honey over medium heat for 5 minutes, mashing until thickened. Spread jam on whole cookies and top with cut-outs.

Chill the dough well for easier handling and ensure cookies are fully cooled before filling.
